Earth apple - benefits and recipes

Earth apple is also known as gulia, Jerusalem artichoke, sun root and Jerusalem artichoke. It is a tuber-like herbaceous plant with yellow flowers that resemble those of sunflowers. It was introduced from North America to Europe in the 17th century. The stems can reach up to 3 metres in height, the leaves are pointed and egg-shaped, appearing from August to November.

What does it contain?

The earth apple contains inulin, which is a polysaccharide and has an effect on metabolism. It is superior to carrot, potato, turnip and beetroot in iron content. It also contains cellulose, pectin, organic acids, fats, proteins, amino acids and polyacids.

Recipe with ground apple

Salad with ground apple

Products needed:

  • 4 pieces of ground apple;
  • 1 apple;
  • 2 tablespoons sunflower seeds;
  • 1 carrot;
  • 1/2 bunch dill;
  • 1/2 lemon;

Wash the ground apple, carrot and apple roots well. Clean and grate. Squeeze the juice of the lemon and pour it over the vegetables. It's a good idea to reach all over the lemon, as it won't allow the vegetables to darken. Salt to taste, add olive oil and stir. Before serving, sprinkle with chopped fennel and sunflower seeds.
